Easy Plum Cake with Greek Yogurt (no added sugar, high in protein)

I am pleased to introduce my favorite and the easiest dessert to make from scratch – Plum Cake with Greek Yogurt. This cake resembles Russian Sharlotka but with healthier ingredients. It can be classified as guilt-free cake since it has plenty of protein and fiber and doesn’t contain added sugar, unlike other conventional cakes.
What is this plum cake made of?
This yogurt plum cake requires
- 3 Eggs
- 1 cup whole milk Fage Greek yogurt
- 3 tbsp butter
- 2 tbsp semolina
- 2-3 tbsp coconut flour
- 2 medium plums
- 2-3 tbsp monk fruit (maple syrup if you prefer)
- 1 lemon zest
- ¼ tbsp vanilla extract
- ¼ tsp salt
- ¼ tbsp baking soda & vinegar
- ½ cup cherries or any other berries (optional)
- 1 small apple and raspberries for decoration (optional)

How do you make coconut flour rise?
Coconut flour is quite a unique flour. It is high in fiber and protein but lacks the most important protein, gluten, that gives the structure to baked goods. To make coconut flour rise in this plum cake, we can implement several tricks:
- add some semolina (gluten-containing flour); it will provide creamier texture and structure needed to keep the dough fluffy
- add whipped egg whites; it will add extra fluffiness
- and add baking soda; it will work as mechanical leavening. Make sure to activate it by mixing it with several drops of lemon juice or vinegar.

Best Plums for this plum cake?
There are plenty of plums to choose from. But for this yogurt plum cake, I prefer red or black plums. They are pleasantly sour and have a pretty strong aroma in comparison with yellow plums, for instance. These features give the cake a nice taste and color. And most importantly, black and red plums are widely available at grocery stores during a plum season that starts around late May (in California).
What do you do with fresh plums?
Besides making a cake, plums can be used for so many other recipes. For example, you can make a spicy sauce, plum jam, yogurt parfait, plum appetizers with cheese. You can add plums to a salad or simply enjoy it fresh. Try my refreshing salad where you can add plums too.
Is this cake a good dessert for dieters?
Dessert is a dessert. Although it has no added sugar, it does have calories just like normal cakes. What’s different about this cake is that coconut flour boosts its fiber content and greek yogurt enriches it with protein: both can positively affect your blood sugar. And when eating it as a part of a balanced diet, it will satisfy your sweet tooth (if you have one) without giving you extra pounds.

How do you store the plum cake?
It is best to eat the cake fresh as it keeps its fluffiness for not too long due to the lack of regular flour in it. If you need to save it for later, keeping it in the fridge for not more than 7 days is safe.

Don't pass by this creamy and fruity cake. The cake resembles Russian sharlotka but has healthier ingredients. It can be classified as guilt-free cake since it has plenty of protein and fiber and doesn’t contain added sugar, unlike other conventional cakes.
Ingredients
- 3 Eggs, egg whites separated
- 1 cup Greek yogurt, whole milk (Fage)
- 3 tbsp butter, melted and cooled (+1 additional to grease the baking mold)
- 2 tbsp semolina
- 2-3 tbsp coconut flour
- 2 medium plums, sliced
- 2-3 tbsp monk fruit (maple syrup if you prefer)
- 1 small apple, sliced for decoration (optional)
- 1 lemon, zest only
- ½ cup cherries or any other berries (totally optional)
- ¼ tbsp vanilla extract
- ¼ tbsp baking soda & vinegar
- ¼ tsp salt
Instructions
- Preheat the oven to 190 C/375 F.
- In a bowl mix yogurt, egg yolks, cooled melted butter, monk fruit, and vanilla extract. Activate baking soda with a couple of drops of vinegar or lemon juice. Then, add it all to the bowl. Mix everything well.
- In a second bowl mix coconut flour, semolina, salt, lemon zest, salt. Combine wet and dry ingredients and mix everything until sour cream-like consistency. Add sliced plums.
- In a grease-free bowl, using a mixer, whip egg whites at low speed. Make sure egg whites are room temperature. Increase the speed once the egg whites form a light foam (soft peaks). Add several drops of lemon juice for extra stability and continue whipping the eggs until they form hard peaks. Egg whites will stick to the head of the mixer. Don’t over whip!

- Carefully incorporate the cake mixture with the beaten egg whites using a silicone scapular. Pour it into a medium-sized baking mold previously greased with some butter or oil spray.
- Bake for 30-35 minutes until light golden brown color
