It’s summer!! It’s zucchini season! And it’s time to clean dust off a vegetable spiralizer and make zucchini spaghetti.
100g of zucchini provides only 21 calories. It’s rich in vitamin C, potassium, and bioactive compounds as lutein, beta-carotene, and zeaxanthin. These features make zucchini a great ingredient for people who are seeking to drop body fat and improve overall health.
By the way, did you know that zucchini is a fruit not a vegetable from a botanical perspective? Despite that, zucchinis are usually used for savory dishes: baked, grilled, fried or simply raw. What's your favorite? Mine is baked and raw and when it comes to raw zucchini it has to be zucchini spaghetti.
And what can be better than combining it with a nutrient dense sauce. I have tried many sauces with raw zucchini spaghetti and my most favorite is pesto. Pesto is a great combination of healthy fats and polyphenols (olive oil), vitamin K and antioxidants (basil, greens in general). In addition, fat in pesto assists some of the zucchini vitamins to be more bioavailable. It is a win-win combo!
I make pesto pretty much from anything I find in my fridge. And today, I had to use kale before it went bad and it turned out AMAZING!! Are you ready to make it?
Ingredients for PESTO:
6-7 tuscan kale leaves 3 tbsp olive oil 2 tbsp hemp seeds 2 tbsp pine nuts 2 tbsp sun dried tomatoes, chopped (for topping) 1 clove garlic 1/4 cup parmesan cheese, grated 1/4 cup fresh oregano, leaves only 1/2 lemon, juice only pinch of pink Himalayan salt (optional)
Ingredients for Zucchini Spaghetti:
2 medium zucchinis, cut in spirals using a vegetable spiralizer
Time Required: 10-15 minutes
Remove kale leaves from stems.
Prepare zucchini spaghetti using a vegetable spiralizer.
In a small kitchen blender, blend kale, oregano, olive oil, lemon juice. Then add hemp seeds, pine nuts, garlic, salt, cheese. Blend it until smooth texture. It is ready!
In a medium bowl, mix zucchini with 2 tbsp of pesto sauce, add chopped sun dried tomatoes on top and enjoy it!
